Zucchini Pancakes - Au Naturale!

Zucchini pancakes with coconut flour.  YUM!  Grain & gluten free. Low-carb. By www.AuNaturaleNutrition.com

​Zucchini is great to cook and bake with, because it adds nutrients to foods!  Zucchini is a good source of protein, Vitamin A, Thiamin, Niacin, Phosphorus, Copper, Vitamin C, Vitamin K, Riboflavin, Vitamin B6, Folate, Magnesium, Potassium, Manganese, and a very good source of Dietary Fiber. (Read more)

There are two big reasons why you should always buy organic zucchini:
  1. The green outside is the most nutrient rich part, which is why you want to buy organic zucchini, so it's free from chemical pesticide sprays.  
  2. Zucchini is one of the most common GMO foods.  Buy it organic and keep your health from being an unnecessary genetic science experiment.

The flavor in zucchini is mostly neutral, and it adds a lovely moisture to baked goods.

I believe in teaching kids to love eating their veggies, but if you have a picky eater, here's a great recipe to "sneak-in" some healthy nutrients!  ;-)

​Zucchini Pancakes

YIELD: Approx 4 good-size servings

Ingredients
  • 6 eggs
  • 1 cup packed zucchini, finely shredded, with juices
  • 1 Tbsp pure vanilla extract
  • 1 or 2 Tbsp honey or grade B maple syrup (optional)
  • 1/2 cup Enjoy Life chocolate chips (optional)
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1 Tbsp ceylon cinnamon
  • 1/4 tsp sea salt
  • Butter or Coconut oil to grease the griddle  (Tropical Traditions is best!)

Directions
  • Preheat your griddle.  With a cast iron griddle, set the heat on med-low.  (At about a 3 on a 10 scale.)
  • Whisk the eggs, zucchini, vanilla extract, and honey together.
  • Mix the coconut flour, cinnamon, baking soda, salt into the wet ingredients.  Add in the optional chocolate chips.  Mix just until the lumps are gone.
  • Allow to sit 5 minutes to allow the batter to thicken.
  • If the batter is too runny, sprinkle in more coconut flour.  Too thick? Add another egg.
  • Grease the skillet.  Mini-size pancakes work well. I make 2 pancakes per 1/4 cup scoop.
  • Flip the pancakes once to finish cooking.
  • Watch them carefully & be careful that they don't burn.
  • These make great leftovers for a quick weekday breakfast or dinner!


I use my cast iron griddle all the time!  It's especially great for breakfast foods like pancakes and eggs.

Wow...these are delicious!!!! I used Maple Extract instead of vanilla extract, added pecans and nutmeg to the mix....my family loved them....great recipe!
