Wonderful White Chocolate - Au Naturale!

So, what's so special about these two healthy fats?

​White chocolate made in a factory is usually made with cacao butter, refined sugar, and milk solids. My recipe uses natural honey for the sweetener and is dairy free. It's a healthier version that contains lovely nutrients and healthy fats to make your skin glow and your mind sharp (see my Guide to Healthy Fats.)

This versatile treat can be made in many different flavors.  Get creative! 
You can tailor it to your favorite flavors or to the holiday you're celebrating.

White Chocolate Recipe:

Cacao butter can be rather hard by itself, so in this recipe, I mix it with palm oil shortening to make it just the perfect, lovely, white-chocolate consistency.
Ingredients:
  • 1 cup raw, organic cacao butter
  • 1 cup organic palm oil shortening
  • 1/2 cup raw, organic honey
  • 1 tsp vanilla extract
  • Optional variations:  add in approx 1 cup of your choice of mix-in's  

(I used freeze dried strawberries.) Other ideas are: orange peel, cranberry, chocolate chips, dried raspberries, blueberries, mint extract, peppermint candy, nuts, mango, etc.

Directions:
  • Slowly melt the cacao butter and palm shortening in a double boiler, or use the technique like I used in the photo below.  I used a glass 4-cup measuring cup set in a frying pan on the stove on medium heat.  The pan was half-filled with water.

  • Once melted, allow the oil mixture to cool on the counter for 15 minutes.

  • Add in the honey and vanilla.

  • Carefully, use a stick immersion blender to mix it well.
  • Then, chill it in the refrigerator for 15 more minutes.

Need an immersion blender?  
They're great for many, many uses in the kitchen; soups, smoothies, desserts, etc. YUM!​

  • Use your immersion blender again to mix it well.  It will turn to a nice light color. The white chocolate mixture should be uniform now and will not separate. (If the mixture is too hard to mix, put it in the microwave for 5-10 seconds or warm it on the stove again.)

  • To make white chocolate bark, fold in your mix-ins and spread your white chocolate into a 9X13 glass dish lined with parchment paper.
  • You can also make beautiful candies by using a silicone candy mold.
  • Or, use a frosting bag & tip to make white chocolate chips!

  • Put your lovely white chocolate dessert back in the fridge and allow it to harden completely.
  • Break the bark apart into serving size pieces.  This makes a lovely gift, too. Enjoy!
  • Store in the fridge.

Hi can I use coconut oil instead of palm oil shortening?

No. Sorry, Geri. Coconut oil is highly variable in consistency (sometimes a liquid, sometimes a hard solid ), and won't work for this recipe. The palm oil always provides the perfect creamy texture. Thanks for reading!
