Vegetable Skilletini - Au Naturale! A delicious, nourishing side-dish or a whole meal. It's a great new way to enjoy your veggies! By Jenny at www.AuNaturaleNutrition.com

​A skilletini is a dish made with vegetables that are fried in a pan (skillet) on the stove. Noodles are usually added.  Plus, it often contains some meat, usually sausage, which makes it a whole meal.  It's often though of as an American-Italian food.  However, I was first introduced the the idea of a skilletini in a Cajun restaurant.  Oooh, la, la - was it delicious!  I think this homemade version is just as tasty and much more healthy.

​Vegetables (from both the land and sea) are sometimes ignored, but they pack an exceptionally big punch when it comes to nutrition.  They’re some of the most nutrient-dense foods. Ideally, 2/3 of your plate should be vegetables at every meal.  5 total servings per day is fantastic and your health will benefit.  Even more is outstanding!  Try new varieties; you’ll probably love them. Vegetables can be eaten raw or cooked, which is great.  Add some healthy fats, too, like real butter or almond butter, to help absorb the nutrients in your vegetables.

​Skilletini recipe:

A skilletini is a great new way to eat vegetables.  Get creative and add in any type of veggies you enjoy.  You can make it Italian flavor, Cajun, Mexican, Chinese, or anything you desire.   The sky's the limit! ​ It also makes fantastic leftovers.  

​It's a great recipe to fill your veggie quota!
  • Select your favorite veggies for your skilletini. Slice them into julienne strips, if necessary. 
​
  • Here, I used different colors of bell peppers and some yellow onion.  Some other ideas are asparagus, mushrooms, sugar snap peas, snow peas, green beans, bamboo shoots, celery, bok choy, eggplant, radishes, okra, leeks, kale, and many, many more.  This is really a great recipe to experiment and try a new vegetable you've never tasted before.

  • Don't forget lots of fresh herbs and spices, which are also very nutrient-dense.  Season it up good!

  • Sautee' your vegetables in a skillet on the stove in about 2 Tbsp of a healthy oil like butter, ghee, or coconut oil.  (See my Guide to Healthy Fats & Oils).

  • Cook the veggies until they're soft and slightly caramelized.

  • If you want to add in some meat - cook it with the veggies.  It needs to be done/cooked inside before adding in your noodles next.  Drain any fat, if necessary.

​You'll never see any gluten-containing noodles on Au Naturale Nutrition. Those are a refined, health-depleting food that spike your blood sugar and cause all kinds of health problems.  So, instead of spaghetti noodles, I make zucchini noodles!

  • While your veggies are cooking on the stove, make the zucchini noodles with your Spiral Slicer.

  • ​Add the noodles to the skilletini just before serving.  You want them heated, but still firm (not cooked to mushy).  If you're adding in garlic, now is also the time, because it burns quickly.

  • You may want to add some sauce, like pasta sauce or some pepper sauce.  (Be sure to read the ingredient label to avoid unhealthy, inflammatory oils like canola, safflower, or soybean oil.)

  • Every time you make the skilletini it can be deliciously different.  Variety is the spice of life!​
