Sprouted flax meal is one of the main ingredients in this yummy cookie recipe. They taste like a decadent treat from the finest bakery, but are a much healthier, guilt-free option. N'oatmeal cookies for everyone! A study published in the Journal of Positive Psychology, suggests that people who frequently participate in small, creative projects like baking report feeling more relaxed and happier in their everyday lives. I completely agree! However, that joy may be short-lived if the baked goods are made with refined sugar and flour, which are highly inflammatory. Then they end up being quite detrimental to your health in the long term. But, not these n'oatmeal raisin cookies! They're high in fiber, contain natural sugars, and plenty of healthy fats. YUM! |
Why didn't I use oat flour?
1) Yes, oats are naturally gluten-free, but they are one of the most cross-contaminated foods with gluten when processed.
2) Oats are a grain, which can cause health issues because they likely contain the villainous anti-nutrients that prevent mineral absorption and cause leaky gut syndrome. Grains are known to be highly inflammatory, raise blood sugar, and create auto-immune responses.

However: On the plus side, whole (unrefined) oats do contain several nutrients, fiber, and antioxidants. You could do a lot worse. So, if you love oatmeal, I suggest the least processed varieties that take a long time to cook (like steel cut oats). Instant/quick oats are highly refined, void of nutrition, often come in packets with lots of sugar and artificial flavors, and definitely should be avoided!

The sprouting of seeds also releases wonderful vitamins. The seed transforms into something brand new, which has released much of its energy, but is much richer in nutrients. They're so very good for your health!
In addition, when flax meal is made from sprouted flax seeds (versus just ground flax seeds), it has very few remaining anti-nutrients and is easier to digest. Flax is also very high in fiber and healthy Omega 3 fats. Flax may have protective benefits against cancer, cardiovascular disease, diabetes, and inflammation (source). I love flax!!
