Tuscan Bean Soup with Kale.  An ultra-nutrient rich meal!  www.AuNaturaleNutrition.com

​This recipe is from The Inner Cook, by Rebecca Katz, is ultra rich in nutrients!  Oh, how wonderfully healthy we could be if we could eat like this every day.

The beans are a great source of plant-based protein.  They also contain soluble fiber, which helps absorb and dilute toxins from the body, contribute to a feeling of fullness, lubricate the bowel and contribute to overall bowel health, increase bile acid production and excretion, lower cholesterol, and stabilize blood sugar.

The kale is exceptionally dense in nutrients.  The leafy-green vegetable contains more calcuim than any other!  It also is rich in folate, iron, vitamin C, carotenes, and even has a good amount of protein.

Fresh herbs in the recipe are phytonutrient rich.  The same molecules that give them their unique flavors and aromas are also potent antioxidants! 

The vegetables are at the top of any list of nutrient-dense foods, including the Magic Mineral Broth base!  They contain many natural vitamins and mineral necessary for optimum health.

​My personal notes on the ingredients:
  • The base of the recipe is ultra-nutritious Magic Mineral Broth (see the recipe here); however if you use store bought broth, make it organic.  Compare the ingredient labels of a non-organic versus organic broth, and you'll see a big difference!  
  • I like to add a strip of Kombu seaweed to my soups.  It's a great natural source of iodine.
  • I'm rather picky about the legumes/beans I eat.  They are rather controversial in the holistic health community.  I wrote a post all about it. My preferred beans to eat are pre-soaked Aduki Beans. Eden brand is fantastic!  Eden brand even adds kombu to their beans. They are digested quite well and much less gassy than other types of beans.
  • Bariani Olive Oil is excellent and quite reasonably priced. Some of the best! It's made from "Stone Crushed Cold Pressed Olive Oil from California Grown Manzanillo and Mission olives".
  • Many pesto brands on the market contain unhealthy oils like canola oil. That's why I make my own (See my awesome, easy recipe HERE). However, you can find brands that just use pure olive oil, if you look.
