Cookie Dough Truffles - Au Naturale!

To Die For! Chocolate Chip Cookie Dough Truffles (paleo, gluten free, grain free, low-carb), By: www.aunaturalenutrition.com

These truffles should come with a warning: Make when other people are around.  Why? Because you may be tempted to eat mass quantities of these while no one is looking.  I'm not saying I'm guilty of that.  Ok, yes I am.  :-)

This recipe is SUPER easy. No bake, too! I altered a recipe from taylormadeitpaleo.com to fit my liking.  Something I added is some Vital Proteins brand grass-fed gelatin/collagen. It makes the texture just perfect, plus it's just about the healthiest type of protein there is.  

Here are just a few of the awesome health benefits:

  • The collagen makes your joints feel lubricated. The health of your joints depends upon the health of the collagen in your ligaments and tendons.
  • The collagen makes your hair, nails and skin super strong and beautiful.  Dashing & handsome, for the fella's.  ;-)
  • The gelatin helps heal your gut.  When your gut is "leaky", bad toxins can pass through your gut lining.  Gelatin fills up the leaks and keeps your immune system strong.

The only difference between gelatin & collagen is that gelatin gels in cold liquids, collagen doesn't.  In this recipe, either will work.

Blue= collagen
Green= gelatin

Chocolate Chip Cookie Dough Truffles
​(with flavor variations)

(grain free, egg free, dairy free)

In a medium bowl, mix together:
​
  • 1/2 cup coconut flour
  • 1/2 cup almond flour or cashew meal
  • 1/2 cup gelatin or collagen powder 
  • 1/2 tsp sea salt
  • 1/2 cup creamy sunflower seed butter, almond butter, cashew butter, or macadamia butter (Choose whichever you, prefer.  Some have a more neutral flavor than others.)
  • 1/4 cup coconut oil (+1-3 more Tbsp. depending on dryness)
  • 2 Tbsp. raw honey (or more, to taste)
  • 1-2 Tbsp. vanilla, or organic mint extract, or other natural extract (to taste) (Try orange!)
  • 1/2 cup Enjoy Life mini dark chocolate chips

Use a mini cookie scoop, then gently roll the balls in your hand.  Place balls onto waxy paper plates.  

​Put in the freezer for 1/2 hour.

For Chocolate Drizzle:
​
  • In a small coffee mug, add 1 Tbsp coconut oil and 1/3 cup Enjoy Life chocolate chips.
  • Melt in the microwave for 30 seconds.
  • Stir and repeat.
  • Drizzle over the plates of frozen truffles OR dip the truffles in the chocolate as they rest on a fork. (You may want to make a double batch of chocolate if dipping all of the truffles.)

Stop and marvel at the masterpiece you've just created. They look like they came from a fancy bakery. They taste as good as they look, too!

Put back in freezer to harden the chocolate drizzle.

Store in fridge or they will melt. Well... if they last that long!!!

I seem to be allergic to flax, what do you think I could sub for that? Would almond meal work?

Hi Claudia, I'll bet almond meal would work great! Please let me know how they turn out (and how much you used) and I can make a note on the recipe. ;-)
I'm allergic to almonds myself, so my husband is my taster in my recipes that call for almond flour.

These will be perfect for the holidays. Of course I am talking about every holiday when I say that! I count birthdays as holidays too. These would look especially beautiful on a holiday cookie platter. My husband will love these. I can't imagine anyone who wouldn't. Thank you for another great recipe Jenny. Lately almost everything I have made is one of your recipes, and they have all been big hits. I bought a five pound bag of coconut flour two months ago, and it is half gone already. I compare this to the time two years ago when I bought a few small bags and never used them because none of the recipes I saw online looked or sounded good. What a difference your site has made!
