TOUCHDOWN! NutButter Protein Cookies.

Nut Butter Protein Cookies.  (grain & gluten free)  By www.aunaturalenutrition.com

I made these delicious treats for a Superbowl party. They were a big hit! I'm not exactly a football fan myself, but I do love a good party and funny commercials. TOUCHDOWN!  

These "manly" protein cookies are just the right treat to serve during the game.  Word has it that girls like 'em, too!  ;-)

Everyone Needs Protein: 

  • It's what makes up the structural components of your body, including the cells, tissues, skin, collagen, and even bone.  
  • Protein gets broken down during digestion into amino acids.  These are then re-assembled as parts of a new protein in your body, cool!  
  • There are 8 essential amino acids (your body cannot make these on its own).  Animal sources contain all 8.  Plant sources contain some, but must be combined strategically to obtain all 8 essential amino acids.
  • The most nutrient rich sources of protein are eggs, meats, nuts and seeds, seafood, legumes, sprouted whole grains, and some dairy.
  • Your need for protein is naturally dictated by your hunger for it. Athletes and individuals under stress may need more protein.

​NutButter Protein Cookies

Just 6 Ingredients!
  • 1 cup natural nut butter , room temp
  • 1 cup organic coconut palm sugar * 
  • 1 tsp vanilla extract
  • 3/4 cup high quality vanilla protein powder 
  • 2 eggs 
  • 1 tsp baking soda

*For a low glycemic sugar option, I buy SWERVE sweetener.  It's awesome!

Directions
  • Preheat the oven to 350 degrees F 
  • In a medium bowl, mix all the ingredients until well combined.  The batter should be quite thick.  Depending on the consistency of your nutbutter, you may need to add in more protein powder.
  • Use a cookie scoop and place them onto ungreased baking sheets.

  • Flatten them with the tines of a fork, making a crosshatch pattern on the cookies. Dip the fork in either coconut sugar or salt before pressing each cookie down.

  • Bake until golden around the edges, about 10-12 minutes. 
  • Allow to cook a few minutes on the cookie sheet before transferring to racks.

After trying Megan's I modified the recipe to turn them in to lactation cookies by adding 4 tbs brewer's yeast, one cup of oats, a tsp of vanilla, and a cup of dark chocolate chips. Ok so the chocolate doesn't help with lactation, but they are delicious!!!
