These gluten-free, grain-free tortillas are as easy to make as pancakes! They can be used for Mexican night dinner, a breakfast burrito, or as a wrap for a sandwich. Yummy-licious! They have a nice, neutral flavor, hold up well to folding, and are a fantastic alternative to wheat or GMO corn tortillas. Ole! Makes: 6 tortillas Ingredients:

6. Cook for approx 1 minute. 7. Flip and cook until done on the other side. 8. Store in an airtight container in the fridge. (I often make a double batch and freeze some for future meals. Hi Danielle, You can probably substitute another starchy gluten-free flour for the tapioca flour. But, the coconut flour is needed for the slight thickening of the batter. Have fun with it & enjoy!

Hi Margret, The coconut flour is used as a thickener. Maybe, I'd try just adding more tapioca flour and see if you can achieve a good consistency. Good luck! Let me know how it works!

One could probably use barley flour or even arrowroot. Arrowroot is a thickener and is used in place of cornstarch. I used to make crepes with barley flour due to reactions to white & wheat flours.

Is the 4 tbsn ghee/butter only supposed to be in the batter or are you supposed to use additional ghee/butter to grease the pan?

How long could you freeze them for. I dont think I would have the time to keep cooking something like this often but I could make a bunch at once and freeze a few months worth....if they will last that long in the freezer.

I don't think so, Kelly, sorry. Coconut flour is a flour like no other. It expands greatly in liquids, so the measurements are very important.
