Super Easy Tortillas - Au Naturale!

Easy, Homemade Tortillas.  (Paleo, gluten & grain-free!)  Great for Mexican nite or breakfast burritos.  by www.aunaturalenutrition.com

​These gluten-free, grain-free tortillas are as easy to make as pancakes! They can be used for Mexican night dinner, a breakfast burrito, or as a wrap for a sandwich. Yummy-licious!  They have a nice, neutral flavor, hold up well to folding, and are a fantastic alternative to wheat or GMO corn tortillas.  Ole!

​Makes: 6 tortillas

Ingredients:
  • 1 cup egg whites
  • 4 Tbsp melted ghee or butter 
  • 1/2 tsp baking powder
  • 1/2 cup tapioca flour (where to find it)
  • 2+1/2 Tbsp coconut flour  (Tropical Traditions brand)
  • 1/4 tsp Real sea salt

​Directions:
  1. Preheat a 9 inch skillet over medium-low heat.  (I love my LeCreuset skillet!)
  2. Add all ingredients in a bowl and beat well to combine.  A whisk works fine.  Room-temp ingredients blend the easiest.  
  3. Allow a few minutes for it to thicken slightly. It will have the consistency of very thin pancake batter.  (Stir in between each tortilla you make.)
  4. Grease your skillet with additional coconut oil or butter/ghee.
  5. Pour in 1/4 cup of the batter and immediately roll it around to evenly coat the bottom of the pan.

​6.  Cook for approx 1 minute.  
7.  Flip and cook until done on the other side.
8.  Store in an airtight container in the fridge.

(I often make a double batch and freeze some for future meals.  That uses almost a whole carton of egg whites, too.)

Hi Danielle, You can probably substitute another starchy gluten-free flour for the tapioca flour. But, the coconut flour is needed for the slight thickening of the batter. Have fun with it & enjoy!

Hi Heather, if you leave in the yolks, the tortillas taste really eggy. With just the whites, they have a more neutral flavor. Enjoy!

These look amazing! Are the egg whites used as a leavener or as a binder?
Our diet is egg-free too so trying to find a suitable egg white substitute that won't affect the taste and consistency of the dough!

could you use FLAX eggs?? (Vegan EGG) you make a flax egg by mixing flax-meal (flour) with water.

Hi Margret, The coconut flour is used as a thickener. Maybe, I'd try just adding more tapioca flour and see if you can achieve a good consistency. Good luck! Let me know how it works!

One could probably use barley flour or even arrowroot. Arrowroot is a thickener and is used in place of cornstarch. I used to make crepes with barley flour due to reactions to white & wheat flours.

Is the 4 tbsn ghee/butter only supposed to be in the batter or are you supposed to use additional ghee/butter to grease the pan?

Just curious - does the salt have a purpose or is it just for taste? Trying to keep a low sodium diet, and wondering if I could just take it out of the recipe altogether? Also about how many tortillas does this make? So excited to try it!

How long could you freeze them for. I dont think I would have the time to keep cooking something like this often but I could make a bunch at once and freeze a few months worth....if they will last that long in the freezer.

Hi Audry, I think these would freeze well for several months. As long as the container is sealed tightly. Maybe even put some parchment paper in between them - for removing just one at a time from the freezer. Enjoy!

Hi Mary, I do use egg whites from a carton for the recipe.
Did you mean the yellow egg-substitute? That is a refined food with zero nutritional value. But, they'd probably work. I left out the yolks because the tortillas taste really eggy if you leave them in.

I wouldn't suggest barley flour, because I don't think anyone should be eating gluten.

I don't think so, Kelly, sorry. Coconut flour is a flour like no other. It expands greatly in liquids, so the measurements are very important.

My husband can not get enough of these. I also think they are delish! So far we have only used them for fish tacos because we are on a fish taco kick. Today I am making 12 of these and freezing them. Fingers crossed they are just as good once thawed.
