​Oh, how wonderful it would be if every morning started out with muffins this delicious and healthy! They're super easy to make and an overnite family favorite. These strawberry muffins are great for both paleo and gluten free diets. They're rich in healthy fats to keep you feeling full and satisfied. Plus, the strawberry flavor can't help but put a big smile on your face!

I was honored to have this recipe first published on MindBodyGreen, titled "Rise 'N Shine Strawberry-Vanilla Muffins (They're Gluten-Free!)"  After just 1 day of publication, it got over 2000 facebook "likes" and almost 500 pins on Pinterest.  It's a keeper!!!

​Strawberry Vanilla Muffins - Au Naturale!

Makes 12 muffins 

Ingredients:
  • 6 eggs  
  • 1/4 cup grassfed butter or ghee, melted  
  • 1 cup coconut milk 
  • 1/4 cup honey
  • 1 Tbsp vanilla extract
  • 2/3 cup  coconut flour
  • 1/2  teaspoon baking powder
  • 1/4 teaspoon sea salt
  • a 1 oz. package of freeze dried strawberries - crushed into smaller pieces

Directions:
  1. Preheat oven to 375 degrees.
  2. In large bowl, blend together eggs, melted butter, coconut milk, honey, and vanilla.  
  3. Separately, combine coconut flour, salt, baking powder, and strawberries.
  4. Mix dry ingredients into batter until there are no lumps.  Do not over mix.
  5. Allow it to sit 5 min in order for the coconut flour to absorb the liquid.
  6. Use a muffin scoop to put batter into muffin pan w/greased liners.  I like to use silicone muffin liners.
  7. Bake for about 30 minutes. 

Store in the fridge (no preservatives here!)

Can fresh strawberries be used

Hi Julia, I've never tried fresh strawberries in this recipe, but it's worth a try! (especially now that strawberries are in season)
I'd perhaps decrease the amount of coconut milk. The dried strawberries soak up a lot of liquid. Let me know how it goes!

Jenny, these are absolutely awesome! I made them last night so I can have them with my breakfast. Well, I skipped the breakfast and just had 3 of these instead. With my morning coffee, it seemed like a treat! Yummy!! I cut honey by half (I always cut the sugars), so they were guilt free too ;) Thanks for another keeper!

Hi i have strawberries in the freezer can i just use froken strawberries?

Hi Maysaa, The freeze-dried strawberries in this recipe soak up lots and lots of liquid. So, using frozen or fresh strawberries won't work the same way. You might want to try your strawberries in my recipe for blueberry muffins. (But you may still need to decrease the liquid a little, because frozen strawberries are very wet.)
