These creamy strawberry ice pops are super delicious, contain healthy fats, and require no added sugars. Are there any artificial flavors? Heck no! Fruit and berries are nature's tasty sweet treats! Mother Nature has provided everything needed for a scrumptious delight! They're loaded with vitamins and phytonutrients & are refreshing on a hot summer day.
I admit I had several failed attempts at making this recipe before I got it just right. The problem was that the pops came out super icy and not creamy. I tried just using coconut milk, then heating it and adding gelatin, but they weren't good enough to share with you. Then it dawned on me... cacao butter!!! That was the missing ingredient for the perfect strawberry creamsicle.
Cacao butter is simply the oil that remains from the processing of the cacao bean when made into chocolate. It's what's used to make white chocolate and it's pure heaven! It's a lovely, healthy fat and gives the creamsicles a nice tangy flavor. When shopping for it, look for brands that are organic, raw, & non-GMO. (Read more about cacao butter HERE.)

Use a Chef'n Stem Gem Strawberry Huller!
This handy little tool makes your job easy & saves more of the yummy red part of the strawberry. Just push the tip into the strawberry, twist, and pull out the stem!
- Melt the cacao butter on the stove or in the microwave. It should come to about 1/2 cup when melted.
- Pour the melted cacao butter into your blender. Add in the coconut milk & vanilla extract.
- Use your strawberry huller to remove the stems from your strawberries.
- Add the strawberries to the blender & mix. Make it smooth or leave nice strawberry chunks; it's up to you!
- Optional: stir in (by hand) some mini chocolate chips.
- Carefully pour the mixture into your Ozera Ice Pop molds. Fill almost to the top & secure the popsicle sticks in place.
- Put your molds in the freezer and allow to set (at least 4 hours).
- Enjoy your sweet treat!
