Snickerdoodles - Au Naturale! (Grain & gluten free, Paleo).  Absolutely delicious!!

​What is a Snickerdoodle???

Snickerdoodles are basically sugar cookies with cinnamon.  But, what the heck does "Snickerdoodle" actually mean?  There are many theories: The Joy of Cooking claims that snickerdoodles are probably German in origin, and that the name is a corruption of the German word Schneckennudel ("snail noodles"), a kind of  cinnamon dusted sweet roll.  The cookie may also be of Dutch origin, with its name being a contraction of Saint Nicholas.   Lastly, it is also possible that the name is simply a nonsense word with no particular meaning, originating from a New England tradition of whimsical cookie names.  Whatever the origin, snickerdoodles are delicious!

Snickerdoodles are often thought of as a Christmas cookie, but can certainly be enjoyed year-round.  They are also usually made with refined, white, wheat flour and refined white sugar.  Not this recipe!  It's gluten and grain free and sweetened with coconut palm sugar.  Everybody will love 'em!

Snickerdoodle Cookies

(makes approx 20 cookies)

Ingredients:
  • 1/2 cup grass-fed butter or ghee, melted (or coconut oil for dairy-free)
  • 1 egg
  • 1 Tbsp vanilla extract

  • 1 + 1/2 cup blanched almond flour (Honeyville brand) or cashew flour
  • 1/2 cup tapioca flour
  • 1/2 cup organic coconut palm sugar
  • 1 tsp baking powder
  • 1 tsp sea salt
  • 2 tsp Ceylon cinnamon

  • ​Mixture for sprinkling: 1 tsp cinnamon + 2 Tbsp coconut palm sugar
Snickerdoodles - Au Naturale! (Grain & gluten free, Paleo).  Absolutely delicious!!

​Instructions:
  1. Preheat oven to 350 degrees F.
  2. Stir the butter, egg, and vanilla until uniform.  (Mixing this recipe by hand works fine.)
  3. In a separate bowl, mix the almond flour, tapioca flour, coconut sugar, baking powder, cinnamon, and sea salt.
  4. Add dry ingredients into the wet. Allow to sit a few minutes to thicken.
  5. Use a cookie scoop  to place balls of dough on a cookie sheet lined with parchment paper or a nonstick SilPat. 
  6. Sprinkle tops with cinnamon & sugar mixture.
  7. Bake approx 12 minutes, until slightly golden.
  8. Cool a few minutes on the cookie sheet before moving them to a rack.

Keep in an air-tight container in the fridge or freezer.

Good question, Kelly! They're soft. The recipe is very similar to my chocolate cookie recipe & have the same texture. Hope you like 'em!
