Savory Beef Pot Roast with Potatoes and Gravy  - Au Naturale!

When I think of a home cooked meal, this beef pot roast is what always pops into my head first.  There's something grounding about it; probably because it's so nutritious.  And if you're new to cooking, this easy meal is a great place to start. Welcome home! (gluten free, paleo, organic, slow cooker recipe)

​When I think of a home cooked meal, this beef pot roast is what always pops into my head first.  There's something grounding about it; probably because it's so nutritious.  And if you're new to cooking, this easy meal is a great place to start. Welcome home!

When it comes to choosing meats, the "Top of the Line" are grass-fed, organic, antibiotic-free, and hormone-free.  When land animals are raised humanely, in natural habitats where they are allowed to roam and eat a natural diet, the nutrient quality of the meat is far superior to meat sourced from conventional farming methods.  

Grass-fed beef is especially rich in omega-3 anti-inflammatory fats and in conjugated linoleic acid (CLA), a proven cancer fighter and lean muscle-building tool.  It supplies vitamins A and E, essential nutrients that are known for their antioxidant properties. Other meats such as buffalo, elk, lamb, and venison can be healthy choices, too.  Compared to commercially raised meats, they are higher in minerals like calcium and magnesium, contain more protein, and are naturally leaner and lower in fat.

​Pot Roast Ingredients:

  • One 3-pound (approx) grass-fed beef chuck pot roast 
  • 1/2 bunch of celery, cut into pieces
  • 1 large yellow or sweet onion, cut into wedges
  • Approx 2 lbs. yellow or baking potatoes, cut into 1-2 inch cubes
  • 1+ cup baby carrots
  • ​1-2 Tbsp spices (I like to use my homemade chimichurri seasoning)
  • 1.5 cups organic beef broth

Please note: If it is a root vegetable, like carrots or potatoes, always buy organic (these will soak up toxins in the soil and cannot be washed off).  Plus, celery is on the EWG "Dirty dozen" list for being high in pesticides.  Buy it organic, too.

Directions:

​1.  Brown the roast in a pan on the stove until all sides have changed color.
​(The inside will still be raw.)

​2.  Layer these ingredients in your slow cooker:
  • On the bottom: celery & onions
  • Next: the beef roast
  • On top: the potatoes, carrots, & spices

​3.  Pour the broth over it all, which will distribute the spices.

​4.  Cover & cook on LOW for 8-10 hours.​

5. Make the gravy recipe (see below) and serve your delicious meal!

​For Beef Gravy:

  1. Reserve the juices from the slow cooker.
  2. Skim off the oil, if you wish.
  3. Put the juice in a saucepan on the stove & bring to boiling.
  4. In a mug, make a mixture of 1/2 cup cold water + 1/4 cup tapioca starch or arrowroot flour.  
  5. Slowly stir the mixture into the juices until you have a gravy-like consistency.  (You may not use it all.)
  6. Add salt & pepper to taste.  YUM!
