You'll never miss the bread cubes in this gluten-free, grain-free stuffing It's the perfect side for a holiday dinner or anytime! The sausage and mushrooms make it extra tasty.

Stuffing was always my favorite part of a Thanksgiving meal, so I invented this recipe in effort to replicate a bread stuffing, but sans the gluten and grains.  I think I did pretty well & I know you'll love it!

​Sausage Stuffing Bake

Serves 6-8  (gluten free, grain free)

Ingredients:
  • 2 Tbsp. butter or ghee
  • 1 yellow onion, chopped
  • ½ bunch celery, chopped
  • 8 oz. fresh mushrooms, chopped
  •  ½ lb. ground sausage (high quality)
  • 1 tsp. sea salt
  • ½ tsp. pepper
  • 1 tsp. sage or poultry seasoning (or to taste)

Breading Portion (this is basically 1/2 the recipe for Focaccia Flax Bread):
  • 1/2 cup sprouted golden flax seed meal 
  • 2 Tbsp coconut flour
  • 1/2 Tbsp baking powder
  • 1/1 tsp sea salt
  • 3 eggs
  • 1/4 cup water
  • 3 Tbsp HEALTHY oil like Bariani Olive oil or melted butter

Directions:
  1. In a large Dutch oven or deep sided frying pan, melt butter and sauté onions until soft and browning.
  2. Add in celery, mushrooms, sausage, salt, pepper, and sage.
  3. Cook for about 15 minutes, until fully cooked and liquid has evaporated.
  4. Remove from heat.
  5. Preheat oven to 375 degrees.
  6. In a medium bowl, mix the breading portion ingredients together until well combined.  (Do not let it sit too long; it will get too thick.)
  7. In the Dutch oven, add in the breading mixture and stir until well combined.
  8. Either bake in the Dutch oven or transfer and bake in a large greased casserole dish.  (Flatten the mixture before baking.)
  9. Bake for 30 minutes. Stir and fluff.
  10. Bake an additional 15 minutes, or until browned on top.

​Need a Chopper? 

I have owned a Pampered Chef Food Chopper since 2001 and it's still as sharp as ever and like new.  I use it constantly and love it! The zig-zag blades rotate as you press down on the chopper.  It cleans-up in the dishwasher and makes kitchen work much easier, and I like that.  ;-)

This chopper made this stuffing recipe a piece of cake!
