Roasted Cabbage Wedges with Bacon, by www.aunaturalenutrition.com

Cabbage lovers will make this recipe again & again. If you are wary about trying cabbage, this might be the recipe that converts you to a cabbage lover.

To prepare your meal, allow plenty of time for this recipe (an hour plus cooking time).

Ingredients
  • 1 head of organic green cabbage 
  • 2 tablespoons Kasandrinos olive oil 
  • sea salt
  • freshly ground black pepper
  • 1 – 8-12 oz package of bacon, uncooked (cut into bite size pieces)

​Instructions
  1. Preheat oven to 400F and spray a baking sheet with non-stick cooking spray.
  2. Pull dirty outer leaves off cabbage.  Cut the cabbage into wedges (about 1″ thick slices).
  3. Use a pastry brush or misto spray bottle to coat the olive oil over both sides of the cabbage.
  4. Sprinkle each side with a bit of sea salt and freshly cracked black pepper.
  5. Roast on the middle rack for 40 minutes.
  6. Remove from oven and top the cabbage with the bacon pieces.
  7. Roast for an additional 20 minutes until the bacon is done to your liking and the edges of the cabbage are brown and crispy. Serve hot and Enjoy!

The leftovers for this recipe are awesome!
