Sometimes the people who eat healthy have a difficult time at parties because so much of the food is items you'd rather not partake in. The easy solution for that is to bring something to share that YOU will eat and enjoy. This recipe for Pizza Stuffed Mushrooms fits the bill! It's made from healthy, whole foods. Plus, it's incredibly delicious and no one will think twice about the fact that it's not a junk food. Although many people classify them as vegetables/plants, technically they belong to the fungi kingdom. And while I often write about eating a rainbow of colors (not white/beige foods), mushrooms are one big exception to that rule. They're awesome! In addition to providing basic nutrition, they help prevent chronic disease due to the presence of antioxidants and the beneficial dietary fibers such as chitin and beta-glucans. Mushrooms also provide several important nutrients. Mushrooms are rich in B vitamins such as riboflavin, folate, thiamine, pantothenic acid, and niacin. They are also the only vegan, non-fortified dietary source of vitamin D. Need a Chopper?I have owned a Pampered Chef Food Chopper since 2001 and it's still as sharp as ever and like new. I use it constantly and love it!
