Pizza Stuffed Mushrooms - Au Naturale!  A lovely, easy to make hors d'oeuvre or full meal!  Made with delicious, whole-food ingredients.  Fantastic for dinner, parties, and makes incredible leftovers, too.  By Jenny at www.AuNaturaleNutrition.com

​Sometimes the people who eat healthy have a difficult time at parties because so much of the food is items you'd rather not partake in.  The easy solution for that is to bring something to share that YOU will eat and enjoy.  This recipe for Pizza Stuffed Mushrooms fits the bill!  It's made from healthy, whole foods.   Plus, it's incredibly delicious and no one will think twice about the fact that it's not a junk food.  In fact, they'll probably ask you for the recipe.  ;-)

Mighty Mushrooms:

There are many types of mushrooms.  Although many people classify them as vegetables/plants, technically they belong to the fungi kingdom.   And while I often write about eating a rainbow of colors (not white/beige foods), mushrooms are one big exception to that rule.  They're awesome!  In addition to providing basic nutrition, they help prevent chronic disease due to the presence of antioxidants and the beneficial dietary fibers such as chitin and beta-glucans.  

Mushrooms also provide several important nutrients.  Mushrooms are rich in B vitamins such as riboflavin, folate, thiamine, pantothenic acid, and niacin. They are also the only vegan, non-fortified dietary source of vitamin D.  Mushrooms also provide several minerals that may be difficult to obtain in the diet, such as selenium, potassium, copper, iron, choline, and phosphorus. Pizza Stuffed Mushrooms Ingredients:

  • 2 lbs whole bella mushrooms, (remove the stems and chop finely)
  • 1 lb ground, organic Italian sausage or breakfast sausage
  • 1 yellow or white onion, chopped finely
  • 1 organic green pepper, chopped finely
  • 1 organic red pepper, chopped finely
  • chopped mushroom stems
  • 1-2 cloves crushed garlic
  • 0-1 Tbsp pizza seasoning (see my recipe to make your own!)
  • 0-1 tsp sea salt
(Seasoning amounts are dependent on the sausage you use.)
  • Add any other ingredients you prefer to make it your own!

Need a Chopper? 

Without my chopper, this recipe would have been rather tedious chopping everything so finely.  I'm sure the job went 10 times as fast with it!

I have owned a Pampered Chef Food Chopper since 2001 and it's still as sharp as ever and like new.  I use it constantly and love it! The zig-zag blades rotate as you press down on the chopper.  It cleans-up in the dishwasher and makes kitchen work much easier, and I like that.  ;-) 

Directions:

  • Wash mushrooms & remove stems.
  • Place mushrooms caps on parchment paper lined cookie sheets.

  • Brown the sausage in a frying pan until crumbly & cooked.  Drain fat.
  • Add in all chopped ingredients & stir.
  • Cook a few minutes more.​

Before baking
  • Scoop the filling into the mushroom caps.  I used a regular sized cookie scoop.  You may need to use a spoon to push it in nicely.
  • Bake at 375 for 30 min.
  • If you "do dairy", top with some raw cheese in the last 10 min.
  • Serve when hot.  Enjoy!
