Oven Roasted Veggies - Au Naturale!

A simple recipe! Be creative with flavor combinations! The more colorful your vegetables, the better variety of phyto (plant) nutrients, vitamins, and minerals. Fill up your plate with veggies!

​This recipe for oven-roasted veggies embodies pretty much everything I love about food, it: 
  • is very easy to make
  • contains just a few ingredients
  • is full of wonderful nutrients
  • looks pretty and colorful
  • makes awesome leftovers
  • tastes incredibly delicious

In the cold weather months, it's still important to eat vegetables even though they may not be growing in a garden at the moment.  Half of our plates at every meal should consist of vegetables and fruits; that amounts to at least 2.5 cups daily.   

​Veggies and fruits (both fresh and frozen) are loaded with vitamins, minerals, fiber, and antioxidants, which have been shown to protect against chronic diseases such as heart disease and cancer. However, sometimes eating cold, raw vegetables on a cold day isn't exactly appealing. Roasting your vegetables in the oven solves that problem!

For this recipe, you will need:
a Misto Sprayer

​Directions:
  • Preheat the oven to 375 degrees.  
  • Spray your pan with olive oil or line with parchment paper.
  • Cut up as many FRESH vegetables as your pan will nicely hold.  
  • Be creative with flavor combinations.  The more colorful, the better variety of nutrients.  Some vegetable options:  broccoli, cauliflower, zucchini, red onions, mushrooms, all colors of bell peppers, celery, snap peas, bok choy, pea pods, carrots, radishes, cabbage, green beans, Brussels sprouts, etc.
  • Garlic is a nice flavor addition.  Fresh herbs, too!
  • Drizzle some high-quality olive oil onto the veggies & stir.  Or, use a Misto Sprayer to nicely coat them.  Kasandrinos Olive Oil is awesome!
  • Sprinkle with salt & pepper.  Or, use my recipe for Homemade Ranch Seasoning.  YUM!
  • Bake in the oven for approx 30 minutes, until lightly browned.  Stir once while baking.
  • Serve & enjoy!
