Orange Dream Cake - Au Naturale!  (gluten and grain-free, paleo).  This incredible cake makes you feel a little regal because it's so rich and decadent!    Feel free to put on a crown or tiara while you enjoy it.  ;-)

​Orange Dream Cake - Au Naturale!

​This delicious cake features the magnificent flavor of succulent oranges. The taste always reminds me of being in the beautiful, peaceful Japanese section of our local botanical garden.  I could spend all day there!

​The cake makes you feel a little regal because it's so rich and decadent!   Feel free to put on a crown or tiara while you enjoy it.  ;-)  

NOTE: Don't be fooled by the dark color of the cake, the only chocolate is on the top, which is optional.  It is moist and lovely in orange flavor. The only sweeteners are the orange juice and a little bit of honey; both are natural and contain nutrients.  

The recipe makes 24 small slices, or feel free to make the pieces larger. The cake isn't very tall, so it probably makes about 8 cupcakes.

Ingredients

  • zest of 1 large organic orange
  • juice of the same orange (approx 1/4 cup)
  • one 5.4 oz can of organic Native Forest coconut cream (approx 3/4 cup)  (Find it here)  or use real, full-fat yogurt
  • 2 large eggs
  • 1/4 cup melted coconut oil/butter/ghee  
  • 1 Tbsp vanilla extract
  • 1/2 cup raw honey

  • 2 cups almond flour/cashew flour (Honeyville brand)
  • 1 cup pecan meal
  • 1/4 cup coconut flour  (I love Tropical Traditions brand)
  • 2 tsp. baking soda
  • 1/2 tsp sea salt


​Directions

  1. Preheat your oven to 350 degrees.
  2. Grate the zest of the orange first, then juice it.
  3. In a large bowl, mix the wet ingredients (by hand works fine).
  4. In another bowl, combine the dry ingredients.
  5. Pour the dry into the wet and stir again.
  6. Spread the batter into a well-oiled 9X13 glass baking dish.
  7. Bake 25-30 minutes
  8. Top with optional toppings (below).
  9. Cool before cutting.
  10. Store bars in the fridge.

​Optional toppings:​

  • None (it's delicious by itself!)
  • Sprinkle chocolate chips on top right after coming out of the oven.  Allow them to melt and spread with a rubber spatula (see photo below).  I always use enjoy life chocolate chips.  They have 3 simple ingredients and are nut, dairy, and soy free! 
  • Use my recipe for vanilla buttercream frosting.
  • Use my recipe for chocolate ganache.​
