Meaty Lasagna - Au Naturale! (Gluten free, low-carb, primal, NO NOODLES!) By www.aunaturalenutrition.com

Do you want your family to love and cherish you?  Make this lasagna! It will quickly become one of your family’s favorites.  No one will ever miss the noodles!

Because of the addictive qualities in grains, they are hard to give up. However, your health is worth it! (Read my post A GRAIN of Truth.) That doesn't mean you have to go without some of the foods you love, including Italian favorites. This lasagna will satisfy any craving you have for delicious Italian food!

The lunchmeat in my lasagna recipe here substitutes for noodles!!  Try turkey, salami, pepperoni, ham, or any combination. 

When selecting lunchmeat, sausage, and other prepared meats:  
Avoid additives and preservatives such as carageenan, BHA, BHT, added nitrates & nitrites, caramel color, corn syrup, gluten, MSG, and other chemical ingredients. Don't assume it's okay just because it comes from behind the deli counter.  Ask to read the label.  Uncured, organic, whole slices of meat are best.

Meaty Lasagna - Au Naturale!


Serves 12  (gluten free, grain free) (contains dairy)

Ingredients:
  • 1.5 lbs sliced lunchmeat, approx 36 slices (high quality)
  • 2 - 7oz. jars tomato paste
  • 2 cups low-sugar, organic pasta sauce
  • 1/2 yellow onion, chopped
  • 1 lb. ground Italian sausage (high quality)
  • 1/2 cup chopped sundried tomatoes
  • 2 cups chopped red & green pepper
  • 2 tsp. chopped garlic
  • 3 - 8 oz packages of shredded mozzarella cheese, idealy raw
  • 1 container parmesan cheese (high quality)

Directions:
1. In a large fry pan or Dutch oven, cook ground sausage, onions, and peppers. Drain fat.
2. Add in garlic, sundried tomatoes, tomato paste and pasta sauce.  This will be good & thick!
3. Preheat oven to 375 degrees.
4. Spray a deep lasagna pan. I like THIS ONE from Cuisinart:

You will be making 3 layers:

​5. On the bottom, layer 1/3 of the lunchmeat.

6. Top with 1/3 of the tomato & sausage mixture.
7. Top with 1 package of shredded cheese plus 1/3 of the parmesan cheese.
8. Repeat 2 more times. 
9. Bake for approx 1 hour.

Serve the lasagna with a nice big lettuce salad & buttered Au Naturale biscuits.

What type of lunchmeat is gluten free? I am new to eating gluten free but know many contain gluten. Thanks

Hi Ruth, I often buy Applegate brand lunch meats, but not their turkey/chicken, because it contains carrageenan (a food additive). It's important you read the labels of every brand. Good for you for going gluten free!
