​Do you love Greek or Mediterranean cooking?  The seasonings are so spectacular!  I was able to go on a Mediterranean cruise a few years ago, and even the air smelled of fragrant spices.  We went to Italy, Turkey, Croatia, and Greece.  It was an incredible trip of a lifetime.

I am super proud of my Greek heritage, and it's no surprise that I love Greek food and traditions. "My Big Fat Greek Wedding" is a classic movie in my family, and lamb is a staple meat in my house.  I always buy the lamb labeled "from Australia" (vs. the USA) because it's more likely to be grass-fed.  If you've never cooked lamb before, this meatloaf is a great recipe to start with.

​Lamb Meatloaf - Au Naturale!  Opa!

Ingredients:
  • 1 lb ground lamb, preferably grass-fed (from GrassFed Traditions)
  • 1/2 of a large yellow onion, chopped
  • 5 oz (approx) chopped spinach
  • 1 egg
  • 1/4 cup golden flax meal
  • 2 tsp Greek Seasoning (see my recipe below OR, here's  a good brand without MSG.)
  • 1/2 tsp sea salt

Directions:
  • Preheat oven to 350 degrees
  • Mix all ingredients in a large bowl or zipper baggie until well combined.
  • Place into a greased glass loaf pan (or try this awesome silicone loaf pan).
  • Or to make mini-meatloaves, scoop the mixture into silicone muffin liners (makes approx 12).
  • Bake for approx 30-35 minutes, or until done (no longer pink) in the middle.

​Homemade Greek Seasoning

If you've ever looked at the ingredients on the most popular brand of store-bought Greek seasoning (it starts with a "C"), you probably noticed that it contains MSG. That's quite a nasty toxin that gives many people headaches, migraines, heart palpitations, numbness, weakness, sweating, flushing, and nausea.  Thankfully, it's super easy to stir up a batch of your own Greek Seasoning that tastes incredible!

Ingredients:
  • 1/4 cup oregano
  • 2 Tbsp thyme
  • 1 Tbsp basil
  • 1 Tbsp marjoram
  • 1 Tbsp onion flakes
  • 2 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp garlic powder

Directions:
  1. ​Use dried herbs & spices, organic if possible.
  2. Mix all the ingredients together.  It's not necessary, but you can put them in a food processor to make it more uniform.  
  3. This makes about 3/4 cup.  Store in a sealed container.

Use the seasoning in any recipe you wish.  It's great on chicken, lamb, beef, pork, potatoes, rice, and homemade breads.  It's fantastic for making an easy Greek Salad Dressing by just combining the seasoning with some high-quality olive oil (especially Kasandrinos Greek olive oil!)
