I challenge you to find a better recipe for grain-free, gluten-free chocolate chip cookies! There are oodles of recipes for gluten & grain free chocolate chip cookies, and I'm pretty sure I've tried making at least half of them. None were perfect until I put together this combination of ingredients. I just know you're going to love them, too, and return to this recipe again & again. I say these are "Just like Grandma's", but my grandma put vegetable shortening in her cookies. Talk about trans fats, yuck!! They were like dry, thin, crumbly hockey pucks. Sorry Grandma! Trust me, these cookies are far superior! They're mostly chewy, but a little crunchy around the edges, especially on day 1. Enjoy! ;-) |
Or, make them mint flavor!!

Instructions:
Keep in an air-tight container in the fridge or freezer.
- Preheat oven to 350 degrees F.
- By hand, stir the butter, egg, vanilla, and molasses (or mint) until uniform.
- In a separate bowl, mix the almond flour, tapioca flour, coconut sugar, baking soda, and sea salt.
- Add dry ingredients into the wet.
- Stir in the chocolate chips.
- Use a cookie scoop to place balls of dough on cookie sheet lined with a nonstick SilPat. Do not flatten the balls.
- Bake approx 12 minutes, until slightly golden.
- Cool a few minutes on the baking sheet before moving them to a rack.
Keep in an air-tight container in the fridge or freezer.
