"Just like Grandma’s” Chocolate Chip Cookies - Au Naturale!

The BEST EVER recipe for grain-free/gluten-free chocolate chip cookies!  Just like Grandma's, but even better! (Paleo) By Jenny at www.AuNaturaleNutrition.com

​I challenge you to find a better recipe for grain-free, gluten-free chocolate chip cookies!

There are oodles of recipes for gluten & grain free chocolate chip cookies, and I'm pretty sure I've tried making at least half of them.  None were perfect until I put together this combination of ingredients.  I just know you're going to love them, too, and return to this recipe again & again. 

I say these are "Just like Grandma's", but my grandma put vegetable shortening in her cookies. Talk about trans fats, yuck!!  They were like dry, thin, crumbly hockey pucks.  Sorry Grandma! 

Trust me, these cookies are far superior!  They're mostly chewy, but a little crunchy around the edges, especially on day 1.   Enjoy!  ;-)

​The BEST EVER Chocolate Chip Cookies!

 (makes 20 cookies)

 Ingredients:
  • 1/2 cup grass-fed butter or ghee, melted (or avocado oil)
  • 1 egg
  • 1 Tbsp vanilla extract or 1/2 Tbsp vanilla powder
  • 1/2 Tbsp molasses

  • 1 & 1/2 cup blanched almond flour (Honeyville brand) or cashew flour
  • 1/2 cup tapioca flour
  • 1/2 cup organic coconut palm sugar
  • 1 tsp baking powder
  • 1 tsp sea salt
  • 1/2 cup enjoy life chocolate chips

Or, make them mint flavor!!

Omit the molasses and add in a few drops of Young Living Peppermint vitality essential oil.  It comes with the Premium Starter Kit you can learn more about HERE.  It's an awesome value!

​Instructions:
  1. Preheat oven to 350 degrees F.
  2. By hand, stir the butter, egg, vanilla, and molasses (or mint) until uniform.
  3. In a separate bowl, mix the almond flour, tapioca flour, coconut sugar, baking soda, and sea salt.
  4. Add dry ingredients into the wet.
  5. Stir in the chocolate chips.
  6. Use a cookie scoop to place balls of dough on cookie sheet lined with a nonstick SilPat. Do not flatten the balls.
  7. Bake approx 12 minutes, until slightly golden.
  8. Cool a few minutes on the baking sheet before moving them to a rack.

Keep in an air-tight container in the fridge or freezer.
