Hot Cocoa on a Cold Winter's Day

Hot Cocoa (dairy free, paleo)  By www.aunaturalenutrition.com

​Today the high in Nashville is below freezing.  Stupid cold!  I can see why old ladies like to wear those warm housecoats. I'd never be caught dead in one, but a snuggie with arms does sound appealing to keep cozy.

So, I just made-up the easiest recipe for dairy-free hot cocoa.  None of those lousy packets with fillers and chemicals either, just healthy goodness!

It's super easy (1 serving):

  1. In a regular size mug, fill the bottom with a nice helping of chocolate chips.  (I use Enjoy Life chips - they're dairy, nut, and soy free.)
  2. Put in a scoop of coconut oil.  (1 tsp to 1 tbsp, whatever amount you like.)
  3. Melt in microwave for 30-60 seconds.  
  4. Add coconut milk into mug, a few drops of vanilla (or mint would be good, too), and heat up to desired temp.

Now how hard was that?  Stay safe & warm!  
If you need me, I'll be snuggled under a blanket until spring.  ;-)

Hi Karen, I'm sure almond milk would work perfectly, too. (I haven't tried it because I'm allergic to almonds.) Hope the cocoa keeps you nice & toasty! ;-)
