Hey, Honey!
I often use honey to sweeten my recipes here on Au Naturale Nutrition.  I buy my honey from a local supplier.  It's raw and unheated - the real stuff! (Don't ever buy that faux, refined honey-like, orange stuff.)  

Honey is definitely sweet, but not just sugar (it's both fructose & glucose). Honey contains minerals, vitamins, and amino acids.   It is a whole food. The darker honeys (like wildflower) are typically higher in bioactive compounds and show greater antioxidant activity. (source)

Mustard isn't too shabby in the health department either! ​It has cancer fighting powers, is anti-inflammatory, helps increase lean muscle mass, and has medicinal properties.  Buy the good, organic varieties (without additives). (source)

Here's a dinner recipe using honey & mustard:

​Honey Mustard Chicken with Mushrooms

Serves 6

Ingredients (organic when possible):
  • 1/4 cup of grainy course mustard
  • 1/4 cup smooth yellow mustard
  • 1/3 cup honey 
  • 1 Tbsp avocado oil or olive oil
  • 1 small yellow onion, diced
  • 8-12 oz fresh sliced mushrooms *
  • 2 cloves garlic, minced *
  • 2-3 pounds boneless skinless chicken (light or dark, cut into large chunks)
  • salt and pepper

* Or, you can use a jar of Trader Joes Marinated Mushrooms with Garlic (drained).

​Directions:
​
  1. Preheat oven to 400 degrees.​
  2. In a small bowl, combine the mustards and honey.
  3. In a large skillet, add the oil, onions, and mushrooms.
  4. Sauté over medium heat until golden and tender.
  5. Add the garlic and cook for an additional 1 - 2 minutes.
  6. Grease an oven-safe baking dish (like a glass 9x11 pan).
  7. Add the chicken and the onion/mushroom mixture. 
  8. Sprinkle with salt and pepper.
  9. Pour the honey mustard mixture on top. 
  10. Bake for about 40 minutes - until the chicken is browned on top and cooked through.  Serve hot.  Over rice is great!
