Grilled Veggies: Zucchini, Onions, and Peppers - Au Naturale!

Grilled Vegetables.  Zucchini, onions, peppers, etc.  YUM!  by www.AuNaturaleNutrition.com

It's amazing how the simplest of recipes are usually the most delicious!  

  • Cut the zucchini into long slices lengthwise using a large (and very sharp) Kyocera Santoku knife.  Cut the onions into thick slices, too.  
  • Then, spray them all with olive oil on both sides using a Misto Sprayer.  
  • Sprinkle homemade ranch seasoning on the zucchini.  (Just plain sea salt & pepper would work fine, too.)

  • Cut up onions in large circular wedges and bell peppers in large chunks.
  • Feel free to throw in any vegetables you wish.  It really is just that simple!
  • Spray these with olive oil, too.

  • Place the vegetables on a hot grill, turning them after just a few minutes to make nice marks on both sides.
  • Be careful not to overcook the zucchini, because who like mushy zucchini? Not me! Al dente' is best.

I love to chop up the leftovers the next morning and mix them with my eggs.  YUM.
