Well, what can I say... Christmastime makes me feel like creating some sweet treats. These truffles are actually great for the Holidays or anytime! :-) When I was a kid, we'd make gingerbread men, and part of the fun was eating some of the dough leftover from the cookie cut-outs. I think these truffles taste just like that yummy dough. Oh... the good ol' days! Truffles are nice because they're especially rich, and you really only need one or two to feel like you've had an extra special treat. This is an easy, no bake recipe! They look pretty fancy, but you can even get little kids involved in making them. In a medium bowl, mix together:
Then, mix in:
You want the consistency to be stiffer than cookie dough, but not so dry that they crack when making into balls. (If too wet, add in more coconut flour. If too dry, add more coconut oil.) Using a mini cookie scoop, make little balls. Roll the balls gently between your palms. Place balls into a bowl of your choice of: cacao powder, pecan flour, fine coconut sugar, flax meal, etc. (I used pecan flour in the photo.) Roll around until coated. This makes a nice big batch. Enough to enjoy some now, plus some to freeze for later; or to give as a gift! Place truffles in an airtight container. Store in fridge or freezer.
