It's time to cool off with a nice, frozen, fudgy treat that just happens to be downright delicious AND good for you.  This easy recipe contains yummy, full-fat coconut milk and a whole avocado (a super-food) to make it super, duper creamy. Both are very light in flavor and allow you to enjoy the rich chocolate taste.  Feel free to experiment with adding mint or maybe some strawberries.  Ooooh, baby!

All about Coconut Milk:

Coconut milk is a wonderful food that I always have on hand in my pantry. I use it in many recipes, including my #1 muffin recipe.  

​In addition to being creamy and delicious...
  • The MCT oil in coconut milk may increase metabolism and perhaps increase weight loss.
  • Coconut milk contains lauric acid, antimicrobial lipids and capric acid, which have antibacterial, antifungal and antiviral properties.
  • The medium-chain fatty acids in coconut milk may also kill the three major types of atherogenic organisms -- bacteria that cause plaque formation in the arteries -- that may lead to heart disease.
  • Coconut milk is highly nutritious when ingested, and these nutrients may help fortify and condition skin and hair as well. (source)

Oh, and by the way, please don't buy the low-fat varieties of coconut milk. You'd be missing out on many/all of the health properties that come from its healthy fat content.

​Frozen Fudge Pops

Ingredients:
​
  • 1/2 cup Enjoy Life mini chocolate chips (approx 4 oz) OR a 3.5 oz organic, dark chocolate bar
  • a 13.5 oz can of organic coconut milk (full-fat), Native Forest brand (Find it here)
  • 1 large, ripe avocado (the bigger, the better).  Only the inside green part, of course.
  • 1 tsp vanilla extract OR  peppermint extract
  • 1/4 cup raw, organic cacao powder (Healthworks brand)  
  • 2 Tbsp coconut sugar   (These fudge pops are very dark & not super sweet.  If you think you may like them sweeter, add 1-2 more Tbsp coconut sugar, or more of your favorite natural sweetener.)

Directions:
​
  • Melt the chocolate in a large microwave safe bowl (preferably with a pouring spout, like a glass 8-cup measuring cup).  About 1 minute total on high.  Stir after 30 seconds.  
  • Add in the remaining ingredients and mix with an electric hand mixer.
  • Pour the mixture into the popsicle molds.  Fill almost to the top.  
  • Freeze until solid & enjoy!

​There are an endless number of frozen treats you can make at home. Try my other recipe for Strawberry Creamsicles! When you easily make popsicles yourself, you avoid the high fructose corn syrup, artificial colors, and artificial flavors in the store-bought varieties. Your whole family will love 'em, and they're a great thing to make with your kiddos when they're bored this summer!  Try making fruity popsicles, too.  Fruit is naturally sweet, so no extra sweeteners are necessary.
