Focaccia Flax Bread - Au Naturale!  This delicious bread is baked flat in a pan.  Great for sandwiches, dinner rolls, and more...  YUM! (paleo, gluten free)  By www.aunaturalenutrition.com

​If you haven't tried any of my recipes yet, or if you're quite skeptical of bread recipes made without wheat flour, then.... trust me, this is 
the recipe for you!! There's something heartwarming about this bread that makes you feel cozy and comfy on the inside. Definitely one of my all-time best healthy bread recipes!!! 

This is called "focaccia" because it is baked flat in a pan.  It works for toast, sandwich bread, or use as a dinner roll.  The texture is lovely; it's soft, but a little grainy, like whole grain breads.  Cut into whatever type of slices you wish.

​Focaccia Flax Bread 

Ingredients:​
  • 1 cup sprouted golden flax seed meal *  
  • 1/4 cup coconut flour
  • 1 Tbsp baking powder
  • 1 tsp sea salt
  • 1 tsp mixed spices (I like organic all-purpose seasoning.)
  • 5 eggs
  • 1/2 cup water
  • 1/3 cup HEALTHY oil or melted butter 


Directions:
  1. ​Preheat oven to 350 F. 
  2. Oil a glass 9 X 13 baking dish or equivalent.  ​In the photo above, I baked mine in a 10" round, ceramic quiche pan.
  3. Mix dry ingredients in a medium size mixing bowl.  By hand works fine.
  4. Add the wet ingredients to the dry, and combine well.  
  5. Pour batter into baking dish. Spread to edges.  
  6. Optional- sprinkle with poppy seeds, sesame seeds, onion flakes.
  7. Bake for about 25 minutes, until it is visibly browning.
  8. Cool and cut into slices.

STORE IN FRIDGE.

*When flax meal is made from sprouted flax, phytic acid is reduced (yay!), which makes the minerals in the flax more digestible and bio-available.

If I sprout my own flax seed, how long do I let them sprout for? And do I dry them, before I grind them?

Hi Joanna, I've always just bought the sprouted seeds and have never tried it myself. But, I applaud you for wanting to try it! I found these directions online. It looks pretty involved, but I hope they help! http://www.thesproutarian.com/growingsprouts.htm
