I'm rather proud of this recipe, because it's one of the first I made-up, and it's always a hit! You can be creative and make it any flavor you desire. I make a pan every week. It's an easy food to grab before work or school on weekday mornings, too.
(Basic recipe with flavor variations)
* If you use coconut oil, all ingredients should be at room temp or it will solidify.
KITCHEN TIP: Bring eggs to room temp quickly by immersing them in a bowl of hot water for a few minutes.
1. Preheat oven to 350 degrees.
2. Combine wet ingredients until well blended.
3. Separately, combine dry ingredients.
4. Mix wet & dry.
5. Bake in a greased ceramic quiche dish (or similar) for approx. 40-50 minutes (depending on your pan).
(Store in fridge.)
Some Flavor Variations: (or make up your own!)
Lemon poppyseed: 1 ½ tsp natural lemon extract OR zest of 1 lemon, 1 tsp poppy seeds
Blueberry: 2 tsp vanilla, 2 tsp. cinnamon, 1 pint blueberries (washed & patted dry)
Chocolate: ¼ cocoa powder, ¼ more honey, 1 cup dark chocolate chips
