Best Ever Fudgy Brownies & Cookie Dough Brownies - Au Naturale!

Best Ever Fudgy Brownies, YUM!  Gluten, dairy, & grain free.  By www.aunaturalenutrition.com

​One of the nicest compliments I ever got from a friend was when she made this recipe for a big dinner party (of people who don't necessarily eat healthy). It was a big hit!  I think they could tell the recipe was much better than anything whipped up from a box. Score one for whole foods!!

Best Ever Fudgy Brownies

(gluten free & grain free)

I like these brownies like I like my men: Dark and Rich! Ha, ha!  ;-)

Ingredients
  • 1/2 cup raw cacao powder
  • 1/2 cup tapioca flour
  • 2 Tbsp coconut flour
  • 1 tsp baking soda
  • 1/4 tsp real sea salt
 
  • 1 can Native Forest coconut cream (5.4 oz), [approx ½ cup + 2 Tbsp]
  • 1 egg
  • 1/4 cup melted butter/ghee
  • 1 Tbsp vanilla extract
  • 1/2 cup raw honey
  • 1/4 cup chocolate chips (or more)   I always use: Enjoy Life mini chocolate chips)

Instructions
  1. Preheat oven to 350 degrees.
  2. By hand in a small bowl, mix together the cacao powder, tapioca flour, coconut flour, baking soda, and salt.
  3. Add in the coconut cream, egg, butter/ghee, vanilla, and honey.  Stir until well combined.
  4. Fold in the chocolate chips.
  5. Spread the batter evenly across the bottom of a thoroughly greased 9" square pan (or equivalent size). 
  6. Bake 20 minutes.
  7. Cool, then cut into squares.

Kitchen Tip:  The BEST way to cut brownies is with a cheap plastic knife (greased). Use the knife in a slow, up & down motion and you’ll get a nice clean line.

​Cookie Dough Brownies

These 3 layer bars take some time to make, but they're totally worth it!

1) The brownie a layer:
Make the recipe for Fudgy Brownies (above), except bake them in a thinner layer using 9X13 glass pan.  
* Bake 15 minutes at 350 degrees.
* Chill the pan completely.

2) Make the cookie dough layer:
In a large bowl, mix together:

  • 1/2 cup golden flax meal, almond flour, or cashew flour
  • 1 cup creamy nutbutter, like almond butter
  • 1/4 cup coconut oil, liquid
  • 1/4 cup honey
  • 1 Tbsp. vanilla

You will carefully spread this mixture on top of the brownies in a thin, flat layer.  Chill again  (in the fridge).

3) For the top chocolate layer:
Melt on the stove over low heat:

  • 1 cup chocolate chips (Enjoy Life mini chocolate chips)
  • 2 Tbsp butter, ghee, or palm shortening   ​(Tropical Traditions offers a Palm Oil Shortening that comes from Eco-friendly Sustainable Farms.)

Spread over the bars and chill again.  

To cut the bars, try to time it where the top layer is starting to harden, but you can still get a knife though without it the chocolate chipping.

Store in fridge or freezer.
