Be a Good Egg!  Enjoy a Vegetable Frittata!

Vegetable Frittata - Au Naturale! Great for busy mornings!  Make ahead and enjoy all week!  If you can stir, you can make it - it's that easy! (breakfast, paleo, primal, gluten-free, low carb). by Jenny www.aunaturalenutrition.com
This recipe uses frozen, pre-chopped vegetables to make life easier!   

A frittata is like a quiche, but without the crust.  It may look fancy, but the prep work is easy.  It will impress any overnight guests, but it's also a great dish to make for yourself on the weekend and enjoy the leftovers all week long.  YUM!

Vegetable Frittata

Ingredients:
  • 10 eggs, beaten
  • 3/4 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1 lb ground breakfast or Italian sausage (optional)
  • Approx 1.5 lb mixture of frozen chopped vegetables of your choice: spinach, peas, carrots, peppers, onions, celery, mushrooms, asparagus, broccoli, etc. (Defrosted, and excess moisture squeezed out of spinach.)
  • 8 oz shredded, raw cheese, optional

Directions:
  1. Preheat the oven to 375°F
  2. In a large bowl, beat the eggs together with the salt and pepper. Set aside.
  3. In a large skillet over medium heat, saute the meat until it’s cooked through. Drain fat.
  4. Add the defrosted vegetables. [Hint: defrost in the microwave while you’re cooking the sausage.]   Stir to combine, just to warm them up a little.
  5. Pour the sausage/veggie mixture into the large bowl and stir into the eggs.
  6. Pour the mixture into a 9X13 glass baking dish.  (Or if, you’re working in a big cast iron skillet, bake the frittata right in that.)
  7. Bake for about 20-30 minutes, or until the eggs are set and not runny.
  8. Top with optional cheese in the last 10 minutes.
  9. Serve directly from the pan/skillet or  store for leftovers.

​Eggs are one of nature's most perfect foods!

Eggs have been controversial in the past because of their cholesterol content, but eggs that come from healthy birds are super rich in nutrients.
In a nutshell, I mean "eggshell", they're full of vitamins (including vitamins A, B, C, D, E, K) and minerals, are rich in Omega 3 fatty acids, are a great source of protein, and eggs are a whole food that contains all 9 essential amino acids.  

Birds are naturally omnivorous; so in addition to seeds, they like to eat bugs and worms. That's why free-range chickens, that have been eating their own "Au Naturale" diet, provide the healthiest meat and eggs. Organic eggs are a good option, too.  The chickens may have been fed seed, but the seed is organic (non-GMO).  It's worth the extra money to buy good eggs.

A healthy egg has a rather hard shell and a nice, dark yolk. It's the yolk that holds all the healthy goodness!  An egg white is just an egg white - they're all the same. When you pay extra money for eggs, it's purely for what's in the yolk.
