Bake a Whole Chicken in a Slow Cooker! A lovely whole-food dinner with less work, but without sacrificing taste or nutrition. So pretty, it looks like a weekend meal - but you'll have time to make on any weekday!

I'm always looking for ways to make whole-food dinners with less work, but without sacrificing taste or nutrition.  This recipe tells you how to bake a whole chicken and vegetables in your slow cooker!  ​

Slow cooker chicken is so pretty, it looks like a weekend meal - but you'll have time to make on any weekday!  It's also a great meal for dinners year-round.  It'll warm your cockles on a cold winter night. Or, it's great to make on hot summer days when you want to avoid heating up your oven.  Baking a chicken in the oven always causes lots of splattering and smoke, so the clean-up is much, much better. Chicken baked in the oven often is a little dry, too.  Not this slow cooker recipe!  It's quite tender and juicy.  It'll be something you make a lot.

Slow Cooker Chicken

Ingredients:
  • one organic chicken, thawed, approx 4 lbs
  • chopped veggies of your choice (here I used celery, carrots, and onion)
  • seasonings of your choice

  • Layer your chopped veggies on the bottom of your slow cooker.

  • Place your chicken on top of the veggies and season it nicely.  

Try these recipes to make your own:
  • Italian Seasoning
  • Ranch Seasoning
  • Greek Seasoning

  • Cover with the lid.  
  • Cook on low for about 8 hours.  That's it!

The chicken will be incredibly tender and juicy, so don't be surprised if it literally falls apart as you remove it from your slow cooker.

Serve your chicken dinner feast with a nice salad with olive oil dressing, plus some Buttery Biscuits or Seeded Dinner Rolls.  YUM!

Love the concept but this chicken still looks raw! I've got to have the skin brown and crispy!

Hi Nancy, After cooking for 8 hours, nothing about the chicken looks raw. Trust me. But, if you want it crunchy on the outside, just put it in a hot oven to brown it up. Just be aware this could dry it out a little.
