A skilletini is a dish made with vegetables that are fried in a pan (skillet) on the stove. Noodles are usually added. Plus, it often contains some meat, usually sausage, which makes it a whole meal. It's often though of as an American-Italian food. However, I was first introduced the the idea of a skilletini in a Cajun restaurant. Oooh, la, la - was it delicious! I think this homemade version is just as tasty and much more healthy.
