There are many types of mushrooms. Although many people classify them as vegetables/plants, technically they belong to the fungi kingdom. And while I often write about eating a rainbow of colors (not white/beige foods), mushrooms are one big exception to that rule. They're awesome! In addition to providing basic nutrition, they help prevent chronic disease due to the presence of antioxidants and the beneficial dietary fibers such as chitin and beta-glucans.

I have owned a Pampered Chef Food Chopper since 2001 and it's still as sharp as ever and like new. I use it constantly and love it! The zig-zag blades rotate as you press down on the chopper. It cleans-up in the dishwasher and makes kitchen work much easier, and I like that. ;-)
